AVO, PEA AND GOATS CHEESE SMASH

Ingrediants

  • 100g chèvre style goats cheese
  • 3 tbsp greek yogurt
  • 1 ripe avocado
  • 1 cup frozen peas, thawed
  • 1 small clove of garlic, minced
  • 1 tbsp chopped fresh mint
  • 1/2 lemon, rind only
  • 1 tbsp extra virgin olive oil
  • Basil leaves
  • 1/2 tsp za'atar
  • Sea salt
  • Cracked pepper
  • 4 x The Everything ABE'S Bagels

Method

In a small bowl, whip together goats cheese and greek yogurt.

In a large bowl, use the back of a fork to smash avocado and thawed peas. Add the minced garlic, chopped mint and lemon rind, then season with sea salt and cracked pepper.

Lightly toast bagels then smear with a generous spoonful of whipped goats cheese. Top with avocado and pea smash and drizzle with olive oil. Finish with basil leaves and za’atar.
