Blue Cheese Portobello Bagel Slider
- 1 ABE’S Bagel – Super Sesame
- 2 tbsps extra-virgin olive oil
- 1 tbsp balsamic vinegar
- 1 garlic clove, minced
- 1 large portobello mushroom, stem removed and sliced
- 1 cup white onion, thinly sliced
- 1 pinch salt
- 1 pinch black pepper
- ¼ cup blue cheese, crumbled
- ½ cup rocket
- 1 thick slice tomato
In a bowl whisk 1 tbsp olive oil and garlic and brush over mushroom.
In a non stick pan over medium heat fry mushrooms for 2-3 minutes on each side until cooked through.
Place on a baking tray with baking paper, sprinkle with blue cheese and grill for 2 minutes.
In a non stick pan over medium heat add 1 tbsp olive oil and add onion, cooking until caramelized. Add balsamic vinegar in the last minute and mix.
Lightly toast a bagel, place a slice of tomato and rocket on the bottom. Place mushroom on top and sprinkle with caramelized onions.
Place its lid on. Put 4 skewers into quarters and cut.
