Looking for an excuse to brunch at home? You just found it.
n a medium bowl, whisk together the eggs, milk and vanilla essence. Pour mixture into a baking dish large enough to fit 8 bagels. Cut bagels in half, and place into the baking dish, inside down. Leave them to soak up the egg mixture for 10 minutes, then turn over and leave to soak for another 5 minutes.
Heat a non stick frypan or skillet and melt 1 tablespoon of butter per two bagel halves. Place the bagels into the frypan, inside down, and cook for 2 to 3 minutes on each side, or until golden and toasty.
Serve with rashers of bacon cooked to your liking, bananas, orange segments, maple syrup, fresh berries, or yoghurt
