Place bacon on a lined baking tray and grill on both sides until golden brown.
Heat olive oil in a large non-stick frypan over a medium heat. Fry the eggs until the whites are set and yolks are cooked to your liking.
Cut bagels in half and toast until golden brown.
Smear a spoonful of relish on the base of each toasted bagel. Top with bacon, fried egg, hollandaise sauce and chives. Season with salt and pepper.
