THE KRANSKY

Ingrediants

  • 8 medium sized or 4 large kransky sausages
  • 1 tbsp oil
  • 6 eggs
  • 1 tbsp butter
  • 1/2 cup milk
  • 180g cherry tomatoes (about 16)
  • 4 tbsp creamy mayonnaise
  • 2 tsp sriracha chilli sauce
  • Pinch of salt
  • Pinch of pepper
  • 1 cup baby spinach
  • 4 x ABE'S Bagels of your choice

Loaded with scrambled eggs, kransky sausage, and spicy sriracha, this bad boy is the definition of a crowd pleaser.

Method

Heat oil in a frypan over a medium heat, and cook Kransky sausages until browned, turning occasionally.

Remove from pan and cut each sausage into quarters.

Cut cherry tomatoes in half, and flash fry in the pan for 1 minute. Remove from the pan and transfer to a bowl.

In a large bowl, whisk together eggs, milk, salt and pepper until well combined.

Heat butter in a large non-stick frypan over medium heat until bubbling. Pour in egg mixture. Leave it to cook, and every 10 seconds or so pull, lift and fold the eggs with a wooden spoon or spatula, until cooked through and no runny egg remains. Remove from heat and transfer to a bowl.

In a small bowl, mix together mayonnaise and sriracha chilli sauce.

Lightly toast bagels, and layer with baby spinach, eggs, kransky sausages and cherry tomatoes, and top with a dollop of sriracha mayonnaise.
