• Serves 4
  • 2 large bunches of spinach
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of butter melted, set aside 2 teaspoons for pan
  • 8 button white mushrooms, sliced
  • 1 block of halloumi, sliced into 8 slices
  • 1 avocado
  • Salt and pepper to taste
  • 4 x The Multigrain ABE’S Bagels

Heat 2 tablespoons olive oil in a non stick fry pan on medium to high heat, add the spinach to the pan, packing it down if you need. Toss the spinach in the pan, coat more of it with the olive oil. Cover the pan and cook for 1 minute. Uncover and turn the spinach over again. Cover the pan and cook for an additional minute. Add mushrooms and cook for a further 4 to 5 minutes, tossing occasionally.

Remove from heat and set aside.

Using the same fry pan turn to a medium heat, and apply more oil if needed. Cook halloumi slices on each side until golden, turning occasionally. Set aside once crispy.

Lightly toast bagels, layer with wilted spinach, mushrooms, haloumi, and sliced avocado.
