ZESTY LEMON CURD & TOASTED COCONUT BAGEL

Ingrediants

  • 1 cup frozen blueberries
  • 1/4 cup caster sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut yoghurt
  • 1/4 cup lemon curd
  • 2 tablespoons coconut threads
  • 4 x The Blueberry ABE'S Bagels

How much zing & zest is best? Try this blueberry beauty for a sweeter morning treat.

 

Method

Place blueberries, sugar and vanilla in a saucepan over a low heat. Add 2 tablespoons of water and gently cook for 8 – 10 minutes until sugar has dissolved and liquid is a syrup like consistency. Remove from heat and set aside to cool and thicken.

Cut the bagels in half and lightly toast.

Smear each bagel with a generous spoonful of coconut yoghurt. Top with lemon curd, blueberries in syrup, and coconut threads.
