French toast but better, because…bagels.
In a bowl, whisk together eggs, milk, vanilla extract and ground cinnamon.
Cut the bagels in half and add to egg mixture. Soak for 5 – 8 minutes or until soft and soaked through.
Melt 1/4 of the butter in a large non-stick frypan over a medium heat. Place two bagel halves into the pan and fry on both sides until golden brown. Repeat with remaining bagels.
Dust bagels with icing sugar then top with coconut yoghurt and berry compote.
