The anything but boring brekkie! Spicy scrambled eggs, topped with chorizo, and sriracha – a spicy lovers type of brekkie.
Heat 2 tablespoons olive oil in a non stick fry pan on medium to high heat, add the spinach to the pan, packing it down if you need. Toss the spinach in the pan, coat more of it with the olive oil. Cover the pan and cook for 1 minute. Uncover and turn the spinach over again. Cover the pan and cook for an additional minute.
Remove from heat and set aside.
Using the same fry pan turn to a medium heat, and cook chorizo slices until browned, turning occasionally. Set aside once brown.
In a large bowl, whisk together, eggs, butter and salt & pepper until well combined.
Heat extra butter in a large non-stick fry pan over medium heat until bubbling. Pour in egg mixture. Leave it to cook, and every 10 seconds or so pull, lift and fold the eggs with a wooden spoon or spatula, until cooked through and no runny egg remains. Remove from heat and transfer to a bowl.
