AVO, PEA AND GOATS CHEESE SMASH

Ingredients
100g chèvre style goats cheese
3 tbsp greek yogurt
1 ripe avocado
1 cup frozen peas, thawed
1 small clove of garlic, minced
1 tbsp chopped fresh mint
1/2 lemon, rind only
1 tbsp extra virgin olive oil
Basil leaves
1/2 tsp za'atar
Sea salt
Cracked pepper

Method
In a small bowl, whip together goats cheese and greek yogurt.
In a large bowl, use the back of a fork to smash avocado and thawed peas. Add the minced garlic, chopped mint and lemon rind, then season with sea salt and cracked pepper.
Lightly toast bagels then smear with a generous spoonful of whipped goats cheese. Top with avocado and pea smash and drizzle with olive oil. Finish with basil leaves and za'atar.
