CHERRY TOMATO, MOZZARELLA & PESTO BAGEL

Ingrediants

  • Serves 4
  • 360g cherry tomatoes
  • 1 tablespoon olive oil
  • 4 tablespoons basil pesto
  • 300g fresh mozzarella cheese
  • Sea salt
  • Cracked pepper
  • 4 x The Everything ABE'S Bagels

An ultimate trio. Roast cherry tomatoes, pesto & soft mozzarella balls. All perched atop our Everything Bagel. Need we say more?

Method

Heat oven to 180ºC and line a baking tray with baking paper.

Place cherry tomatoes on lined baking tray. Drizzle with olive oil and season with salt and pepper. Bake for 15 – 20 minutes or until skins are just beginning to split.

Cut the bagels in half and lightly toast.

Smear each bagel with basil pesto and top with torn mozzarella and cherry tomatoes. Season with salt and pepper.

Bagels can be placed under the grill for 1 – 2 minutes if you prefer your mozzarella warm.
