GARLIC MUSHROOM, BACON, AVOCADO & PESTO BAGEL

This bagel's worth its weight in gold. We’re talking, avocado, pesto, Portobello mushrooms and bacon, all stacked between the Sesame Bagel. You’ll want to write this one down.

Ingredients
20g butter
2 cloves garlic, minced
8 large portabello mushrooms
8 rashers of streaky bacon
1 avocado, thinly sliced
1 cup baby rocket leaves
1/2 small red onion, thinly sliced
80g feta cheese
2 tablespoons pine nuts, toasted
4 tablespoons basil pesto
4 x The Sesame ABE'S Bagels -
Method
Melt butter in a large non-stick frypan over a low heat, add the garlic and mushrooms and gently sauté until softened and cooked through. Season with salt and pepper.
Place bacon on a lined baking tray, grill until golden and crispy on both sides.
Cut bagels in half and toast to your liking.
Smear a generous spoonful of feta on each bagel base. Fill bagels with mushrooms, bacon, avocado, rocket, red onion, feta and pine nuts. Season with salt and pepper.
