THE BACON, EGG & HOLLANDAISE

It's bacon, egg, and hollandaise sandwiched between two slices of garlicky, Everything goodness. Need we say more?

Ingredients
8 rashers of streaky bacon
1 tablespoon olive oil
4 eggs
4 tablespoons tomato relish
1/3 cup hollandaise sauce
1 tablespoon finely chopped fresh chives
4 x The Everything ABE'S Bagels
Sea salt
Cracked pepper -
Method
Place bacon on a lined baking tray and grill on both sides until golden brown.
Heat olive oil in a large non-stick frypan over a medium heat. Fry the eggs until the whites are set and yolks are cooked to your liking.
Cut bagels in half and toast until golden brown.
Smear a spoonful of relish on the base of each toasted bagel. Top with bacon, fried egg, hollandaise sauce and chives. Season with salt and pepper.
