TURKISH EGGS

Ingrediants

  • 1 tablespoon olive oil
  • 1 onion, diced
  • ½ red capsicum, cored and diced
  • 2 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ¼ chilli flakes, optional
  • 2 tablespoons tomato paste
  • 400g tin of crushed tomatoes
  • 1 tablespoon worcestershire sauce
  • Sea salt
  • Cracked pepper
  • 4 eggs
  • 1 tablespoon chopped fresh parsley, to serve
  • 4 x The Everything ABE'S Bagels

Turkish eggs with a side of Everything bagels – breakfast has never tasted so good.

 

Method

Heat oil in a medium sized cast iron pan. Fry the onions and capsicum until soft. Add the garlic and spices and fry for 1 minute or until aromatic. Add the remaining ingredients, except for the eggs, and gently simmer for 20 minutes.

Heat oven to 180º C.

Using the back of a spoon, make four shallow wells in the sauce. Crack an egg into each well. Transfer the pan to the oven and bake for 7-8 minutes or until the whites are no longer clear. Top with fresh parsley and serve with toasted bagels.
