ZESTY LEMON CURD & TOASTED COCONUT BAGEL

Ingredients
1 cup frozen blueberries
1/4 cup caster sugar
1 teaspoon vanilla extract
1/2 cup coconut yoghurt
1/4 cup lemon curd
2 tablespoons coconut threads
4 x The Blueberry ABE'S Bagels -
Method
Place blueberries, sugar and vanilla in a saucepan over a low heat. Add 2 tablespoons of water and gently cook for 8 - 10 minutes until sugar has dissolved and liquid is a syrup like consistency. Remove from heat and set aside to cool and thicken.
Cut the bagels in half and lightly toast.
Smear each bagel with a generous spoonful of coconut yoghurt. Top with lemon curd, blueberries in syrup, and coconut threads.
